Arrange potatoes in overlapping rows in a shallow casserole dish.
Fry, drain and dice the bacon, leaving the bacon fat in the pan. Set prepared bacon aside.
Fry onion in bacon fat until tender.
Mix the flour, sugar, salt & pepper together in a small bowl, and then stir into the cooked onions.
Add the vinegar and water to the onion mixture and stir for about 2 minutes over medium fire until thickened.
Pour the thickened sauce over the potatoes in the casserole dish.
Garnish with the bacon and minced onions. Serve warm.

che4u 1 year agoVERY good! I added some shredded red cabbage and sauteed with the onion and everyone raved about it, save the kiddos that don't enjoy anything new. I will definitely make again!
cherbewick 1 year agoThis was very good. I used 1/4 cup cider vinegar and a little extra water, just the right amount of sour and sweet.

TheKitchenWitch 4 years agoThe potato salad had a perfect balance of the vinegar and the sugar. It had a nice sharp taste but not over powering. The only thing I did different was add some chopped fresh parsley, only because I had it on hand.
