Hot German Potato Salad

Great Oktoberfest recipe!

"Nice recipe. I am from Germany. May I suggest instead of just plain water.. Add beef bouillon cube or granules to the water. This will give it a fine flavor and you may omit the salt if the bouillon has salt in it. Yummy either way :)"

Ingredients

6 medium Potato; cooked, peeled, thinly sliced
6 slices Bacon
1 small Onion; chopped
2 tablespoon Flour
3 tablespoon Sugar
1 teaspoon Salt
Fresh Ground pepper; to taste
1/2 scant cup Vinegar
3/4 cup Water
Green onion; minced for garnish

Preparation

Arrange potatoes in overlapping rows in a shallow casserole dish.

Fry, drain and dice the bacon, leaving the bacon fat in the pan. Set prepared bacon aside.

Fry onion in bacon fat until tender.

Mix the flour, sugar, salt & pepper together in a small bowl, and then stir into the cooked onions.

Add the vinegar and water to the onion mixture and stir for about 2 minutes over medium fire until thickened.

Pour the thickened sauce over the potatoes in the casserole dish.

Garnish with the bacon and minced onions. Serve warm.

Great recipe!! Followed suggestions of others and used the apple cider vinegar. Turned out great.

VERY good! I added some shredded red cabbage and sauteed with the onion and everyone raved about it, save the kiddos that don't enjoy anything new. I will definitely make again!

This was very good. I used 1/4 cup cider vinegar and a little extra water, just the right amount of sour and sweet.
