1 tsVanilla
5 tsAll purpose flour
1 cButtermilk
1 cButter
2 tbCocoa
CAKE
1 1/2 cSugar
1 tsVanilla
2 1/2 cFlour, all purpose; sifted
1 tsBaking soda
1/4 cFood coloring; red
1 cpowdered sugar; sifted
1 tbVinegar
1 cmilk
2 Eggs
1/2 cShortening
1 tsSalt
FROSTING

Waldorf Red Velvet Cake and Frosting Preparation

CAKE: Cream shortening and sugar till fluffy. Add eggs and beat 1 minute. Add salt, beat. Add vanilla and coloring to buttermilk. Alternate adding flour, cocoa and milk mixtures to batter. Combine soda and vinegar in cup and add to cake batter. Bake in (2) 9" cake pans at 350F for 25 to 30 minutes. Cool on cake racks.

FROSTING: Cook milk and flour until thick; cool in fridge. Beat butter, sugar and vanilla with mixer. Add flour and milk mixture a little at a time (make ahead of cake so that it has plenty of time to cool). Beat well.

If it was possible I would give this NO stars! Overloading an ordinary cake with red food coloring is NOT WHAT A RED VELVET CAKE IS!

This is a really good cake. I tested the icing before I used it because some reviews said it wasn't that good. Glad I did because it was a little to bland for my liking, but I added 4 oz of cream cheese and some more confection sugar and it was really good.

I can't comment on the cake; I used this for the frosting for hubby's birthday cake. I agree that the flavor is good, but the texture came out so greasy he had me dump it and find another frosting recipe. He said it felt like eating straight butter; I'm glad I hadn't put it on the cake yet!

My wifes family had a tradition of Red Velvet cake for Christmas. I have tried several versions until I found this one. It was by far the best cake we have tasted and the frosting was so different. That was the first thing everyone commented on was how good the frosting was.
