| 1 smallOnion; Chopped |
| 1 1/2 cupsCooked Chicken Breast; Shredded |
| 3/4 cupShredded Cheddar Cheese; Divided |
| 1 (12-oz) BottleChunky Salsa |
| 1/2 (8-oz) PackageLight Cream Cheese |
| 8 (8 inch)Taco Size Flour Tortillas |
| 1 (8-oz) CanRed Enchilada Sauce |
Cheese & Chicken Enchiladas Preparation
PREHEAT oven to 350(F.)
1 - Spray Large, Nonstick skillet with nonstick cooking spray
2- Add Onion; cook over medium heat, stirring occasionally, for 4 to 5 minutes or until tender.
3 - Add chicken, 1/2?? cup cheddar cheese, salsa and cream cheese, cook, stirring occasionally for 2 to 3 minutes or until cheeses are melted.
SPOON a scant 1/3 cup chicken mixture down center of each tortilla; roll up.
4 - Place in 13 x 9-inch (3-quart rectangular) baking dish; drizzle with red enchilada sauce.
5 - Sprinkle cheddar cheese; cover.
6 - Bake for 15 minutes or until heated through and cheese on top is melted.
