This is a wonderful and flavorful Indian lentil dish.

Original recipe makes 8
1 cupLentils
2 cubesChicken bouillon
1 Bay leaf
1 1/2 tablespoonCumin
1 teaspoonThyme
1/2 Onion
1 Carrot
3 clovesGarlic
1 cupSpinach
5 cupWater

Lentils and Spinach Preparation

Mince the garlic.

Dice the carrot and onion.

Fresh or frozen spinach can be used.

Coursely chop the spinach if fresh.

Rinse and drain the lentils.

Lentils dont really have to be soaked before cooking.

Add all the ingrediants but the spinach into the pot and allow to simmer until beans are at the desired texture betwwen 45 min to 1 hour.

Bean freshness also varies the cooking time.

The older the dried bean the longer it takes to cook.

Once the lentils are done remove the bay leaf and add the spinach.

Cook for a minute longer then take off the heat.

If not eating in the next hour or so put into the refrigerator.

    One thing I like to do to add flavor is use some smoked ham hocks. Since smoked ham hocks take a few hours to cook. I boil them seperatly. When the hocks are done cooking I add the stock from the boiling hocks and use that as the liquid for the beans, then when the beans are almost done I add the hocks themselves to the lentils. It give the lentils a southern soulfood taste. Trust me they are bursting with flavor then. Another thing you can do is sautee all the vegies with some cut up bacon and then cook as directed, that also adds some flavor. Generally any type of smoked pork goes very well with this dish.
