Mediterranean Veggie Wraps
|3 cupsplain yogurt|
|3 tbspchives; chopped|
|3 tbspcilantro; chopped|
|3 tbspmint leaves; chopped|
|2 tsp.course salt|
|1 tsp.ground pepper|
|1 tsp.yellow curry powder|
|1 mediumred onion|
|2 cupscarrots; shredded|
|0.5 cupblack olives; sliced|
|1 cansweet peas|
|10 Sun-dried tomato flavored tortillas|
|cooked crab meat or grilled lamb piece; (optional)|
Mediterranean Veggie Wraps Preparation
Mix all sauce ingredients in a small bowl and set aside.
Cut onion and cucumbers into small, 1-inch strips. Mix with shredded carrots, peas, and olives.
Spread sauce all over tortillas, to within 1 inch of edges. Put in crab or lamb for the meat-eaters, leave it out for the vegetarians. Lay veggie filling down the middle, and wrap.
Makes about 10 wraps.
