Grilled Carnitas Quesadillas

I had some leftover carnitas from the night before, I heated it in a skillet on high heat with a little oil and salt to get the edges crunchy.

Grilled Carnitas Quesadillas Preparation
Divide beans and spread on half a small tortilla.
Divide your meat and spread on top of beans
Divide your cheese and put on top of meat.
Fold over tortilla and spread little butter all over top.
Heat up skillet or grill pan with very high heat, and sprinkle a little oil
Lay buttered side of quesadilla down and press down with spatula,
Blacken your jalapeno while this is cook by just placing onto your flame on burner, turning to get all sides black.
Flip quesadilla when dark grill marks appear. About 3-4 minutes each side, careful not to burn.
Then just top your quesadilla with your diced veggies, salsa, sour cream, and guacamole.
