Texas Caviar

Great flavors. Use low fat dressing or make own with olive oil, balsamic vinegar and fresh herbs, salt, pepper, mustard

Ingredients

3 cup Tomato; chopped
1 cup Bell pepper; chopped
1/2 cup Red onion; chopped
1/3 cup Cilantro; chopped
2 16-oz can Black eyed peas; rinsed and drained
1 12-oz can Corn
1 bottle Italian dressing
juice of one lime
5 Green onion; chopped
1 Jalapeno peppers; chopped fine

Servings  

Preparation

Mix all ingredients. Refrigerate at least 4 hours to meld flavors before serving. Serve with Pita Chips or other strong chip.
