Original recipe makes 4
2 cupsplum tomatoes; seeded and diced
1 1/2 cupsmango; diced peeled ripe
1/2 cuponion; diced
1/2 cupFresh Cilantro; chopped
2 tablespoonsFresh lime juice
1 tablespoonCider vinegar
1 teaspoonSugar
1 teaspoonsalt; divided
1 teaspoonblack pepper; divided
2 clovesgarlic; minced
4 6-ozhalibut fillets
1 tablespoonolive oil
1 Jalapeno peppers; finely chopped

Halibut with Fresh Mango Salsa Preparation

Combine first 7 ingredients. Add jalapeno. Chill for several hours to meld flavors

Rub halibut with oil; sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper. Place fish on grill rack; grill 3 minutes on each side or until fish flakes easily when tested with a fork. Serve with mango salsa.
