"This was very easy and delicious. I had to double the recipe for last minute company. I would say that next time I would substitute a Tablespoon of the brown sugar for an additional Tablespoon of the mustard. The sauce (which i doubled/quadrupled for mine) was a tad sweet but delicious non the less. I used 1/2 teaspoon of Thyme and 1 teaspoon garlic powder for the double batch and it was perfect. Even my picky boyfriend who "hates polish sausage" gobbled it up... note i used skinless kielbasi. - Gina"

1 pound red potatoes; cubed
2 tbl Water
3/4 pound kielbasa or polish sausage; cut into 1/4 in slices
1/2 cup onion; chopped
1 tbl olive oil
2 tbl brown sugar
2 tbls cider vinegar
1 tbl dijon mustard
1/2 tsp dried thyme
1/4 tsp pepper
4 cups fresh baby spinach
5 strips bacon; cooked and crumbled

Original recipe makes 4 Servings



1.Combine potatoes and water in microwave safe bowl. Cover and cook on high for 4 minutes, or until tender. Drain.

2. In a large skillet, saute kielbasa and onion in oil until onion is tender. Add potatoes and saute 3-5 minutes longer.

3. Combine brown sugar, vinegar, mustard, thyme, pepper; stir into skillet. Bring to a boil. Reduce heat and simmer uncovered for 2-3 minutes. Add spinach and bacon. Cook and stir until spinach is wilted.

I can't believe other reviewers didn't mention too little liquid! I followed this recipe to the letter, and wound bypassing a,half cup of water!

This is an enjoyable fall recipe. It's very filling. I suggest coming the potatoes a little more if you're going to cut them like the picture. Or cut them to about 1/2in to cook faster. I doubled the sauce, except for the thyme as others suggested. I used turkey smoked sausage. Since it included a starch and a veggie, I paired this with sliced apples. My picky eater thought it was spicy, probably because of the Dijon mustard. My 'I'll eat anything' eater ate it all. My husband and I thought it was decent.
