"This was very easy and delicious. I had to double the recipe for last minute company. I would say that next time I would substitute a Tablespoon of the brown sugar for an additional Tablespoon of the mustard. The sauce (which i doubled/quadrupled for mine) was a tad sweet but delicious non the less. I used 1/2 teaspoon of Thyme and 1 teaspoon garlic powder for the double batch and it was perfect. Even my picky boyfriend who "hates polish sausage" gobbled it up... note i used skinless kielbasi. - Gina" - ginablondie1016

Original recipe makes 4 Servings
1 poundred potatoes; cubed
2 tblWater
3/4 poundkielbasa or polish sausage; cut into 1/4 in slices
1/2 cuponion; chopped
1 tblolive oil
2 tblbrown sugar
2 tblscider vinegar
1 tbldijon mustard
1/2 tspdried thyme
1/4 tsppepper
4 cupsfresh baby spinach
5 stripsbacon; cooked and crumbled

Potato Kielbasa Skillet Preparation

1.Combine potatoes and water in microwave safe bowl. Cover and cook on high for 4 minutes, or until tender. Drain.

2. In a large skillet, saute kielbasa and onion in oil until onion is tender. Add potatoes and saute 3-5 minutes longer.

3. Combine brown sugar, vinegar, mustard, thyme, pepper; stir into skillet. Bring to a boil. Reduce heat and simmer uncovered for 2-3 minutes. Add spinach and bacon. Cook and stir until spinach is wilted.

    This was really good, but I'm from New Orleans, so I had to add boiled shrimp! I also used potatoes and sausages left over from a crawfish boil. It added so much flavor to an already great dish!

    The first time i made it per recipe, it was okay. This time i subbed the spinach with mushrooms, apple, and red peppers. Added fresh garlic& a bit of mesquite to the dressing. NOW I give it 5 stars!

    Quick, easy, and delicious recipe. My fiancé loved it and he's not usually a mustard fan. The sauce was phenomenal and the bacon, though adding calories, added a tasty touch.
