Excellent recipe--everyone loved it including my 1 yr old.
I had to make a few adjustments based on what I had on hand. I did not have spinach, so I used 1c of frozen peas. I did not have bacon so we omitted that and added a pinch of salt to taste at the end of cooking.
Next time I would decrease the sugar to 1T--it was slightly too sweet for our taste.
Overall great recipe and quick to put together!

1) Potatoes should be completely cooked through and moist before adding to pan
2) Add extra 1/4 cup of water to the vinagre mix
3) Allow the potatoes time to brown then flip so you get a good brown on multiple sides. This takes more time
The added water prevents drying and allows the flavors to meld in the pan for a little while. Browning the potatoes by keeping them stationary in the hot pan for a while provides nice additional texture to the potatoes.

Excellent, Tasty, and spicy enough even with Mild Keilbasi. The Vinegar matches the brown sugar and mustard and melds perfectly with the Keilbasi and potato. It is a well balanced dish. Spinach adds a little color and makes you feel like you're eating something healthy. Good mental effect.
I love roasted potatoes, so I roasted the potatoes first this time. I have made it both ways following the recipe and roasting the potatoes first. This is a great week night meal for our busy family. I have already made it more then once. It is a great go to with great flavor.
Great recipe! May want to double servings and cook potatoes less time in the microwave, they became a bit mushy in the Pan but still really good. Also definitely more water is needed. Can't wait to try this again!
Tasted very good, I used russet potatoes that is the only thing I changed, I may use garlic and chive's and drop the Thyme next time, I will also add 1/8 tsp of salt. tasted good however the way it is listed.
I made this for dinner tonight and was very pleased to find that it was soooooo good! I doubled the recipe for the sauce except for the brown sugar because people posted on here that it was a little sweet, so i instead only used 1tbsp. In the future I would double the sauce recipe and use 2 tbsp of brown sugar but I will definitely be making this again!
Worked out well for me tonight. Everyone liked it including my 7-year old daughter & 24-year old son. I followed the recipe exactly (I'm not confident enough in my cooking to tweak things the first go-round). Might try to double the sauce like some others have said but it was very tasty as is.
I had to cook my potatoes a lot more for them to be soft, no biggie. I used smoked sausage instead, I also didn't have Dijon mustard and used regular yellow mustard, turned out great! ?? the family devoured it in no time and I have to make it again tonight, delish!!
