This little treat is the perfect end to a hearty meal. It’ll help you digest and settle any large meal that you may have over indulged in. Not to mention it tastes freakin awesome! It does require a ice cream maker though.

Original recipe makes 6
3/4 cupWater
3/4 cupSugar
1/8 teaspoonCream of Tartar
2 teaspoonsfresh ginger; finely grated peeled
1 cupplain nonfat yogurt
1 cuplow-fat buttermilk
1/4 cupfresh lemon juice
1 teaspoonlemon peel; finely grated

Lemon Ginger Frozen Yogurt Preparation

Bring water, sugar, and grated ginger to boil in medium saucepan, stirring until sugar dissolves. Once boiling add Cream of Tartar. Boil 2 minutes. Strain into medium bowl and chill until cool. Whisk in yogurt, buttermilk, lemon juice, and lemon peel. Process in ice cream maker according to manufacturer’s instructions; cover and freeze.

    This is a fabulous summer treat! Easy, satisfying dessert without lots of calories.

    Normally it calls for corn syrup. But since that’s one of those non-digestible processed weird things they like to put in everything , I choose to omit it from all my recipes. Using Cream of Tartar once the mixture is boiling achieves the same desired effect without adding any extra sugars(or diabetes causing, non-digestible, processed mutant food). [I posted this recipe.]
