Chicken, Mushrooms, and Peppers Pasta
| 1 boxMezze Penne |
| 2 tablespoonsKosher Salt |
| 3 tablespoonsGourmet Garden Basil Paste; or 3 Tablespoons Fresh |
| 1 tablespoonGourmet Garden Parsley Paste; or 1 Tablespoon Fresh |
| 1 teaspoonHerbs De Provances |
| 0.5 teaspoonRed Pepper Flakes |
| 8 clovesGarlic; Minced |
| 0.5 cupSliced Red Peppers |
| 2 Boneless Skinless Chicken Breasts; cut into bite size pieces |
| 0.5 cupMushrooms; Freshly sliced |
| 0.25 cupExtra Virgin Olive Oil |
| 0.75 cupRed Onion; Minced |
| Salt and Pepper; to taste |
| 0.25 cupPasta Water |
Chicken, Mushrooms, and Peppers Pasta Preparation
Prepare pasta as directed on box with the 2 Tablespoons of Kosher Salt in water. Save a 1/4 Cup of the pasta water for later.
In a large Saucepan add EVOO heat to Low/Med. Add onions and cook until translucent. Then, add Garlic, Basil, Parsley, Herbs De Provance, Red Pepper Flakes, and Salt and Pepper to taste. Combine and cook for 1 minute.
Add Chicken in bite sized pieces and brown.
After Chicken is browned add in Peppers and fresh Mushrooms. Add Pasta Water. Combine well then cover and cook until chicken is completely cooked through.
Combine with Pasta ans serve.
