Ingredients

1.5 cups Sugar
2 cups all purpose flour
2 tsp Baking soda
0.25 tsp Salt
2 large Eggs; slightly beaten
2 cups Fruit cocktail (with juice)
1 -- ICING --
0.75 cup Evaporated milk
2.25 cups Brown sugar
0.5 cups Butter
0.75 cups Coconut
0.75 cups Pecan; halved
1 tsp Vanilla

Original recipe makes 20 Servings

Preparation

Mix sugar, flour, baking soda and salt. Add slightly beaten egg and fruit coctail. Stir only till mixed. Bake in greased 9 x 13 pan at 350 for 30 minutes.

ICING:

Boil butter, milk and brown sugar for 1 minute. Add vanilla, coconut and nuts. Poke holes in warm cake. Pour icing over top of warmed cake.

Notes

Recipe calls for 2 cups of fruit cocktail. a 14oz can is a little short of two cups. Add marichino cherries, grapes or another fruit to bring up juice/fruit to equal two cups.

OMH!! Sooooo yummy! I've also used just crushed pineapple. I think they call that Cajun cake. Very popular in new Orleans!
