1 mediumZucchini; halved lengthwise, sliced
1 6-oz packageSouthwest chicken breast strips
2 cupsRice; cooked
15 ounceBlack beans; drained and rinsed
1 1/2 cupsSalsa
1 cupWhole kernel corn; frozen

Southwest Chicken and Rice Skillet Preparation

PREP TIME: 25 min TOTAL TIME: 25 min

Spray a large skillet with nonstick cooking spray, heat over medium heat. Add zucchini, cook and stir 3 minutes.

Stir in rice, black beans, chicken, salsa and corn; bring to a boil. Cover, reduce heat and simmer 10 minutes or until heated through.
