Original recipe makes 16
2 cansblack beans; (drained but not rinsed)
2 cansyellow corn; (drained but not rinsed)
1 bunchgreen onion; chopped
1 tomato; diced
1 lemon; juiced
2 limes; juiced
1 tbspolive oil
1 tbspred wine vinegar
1 tbspgarlic; minced
Salt and pepper; to taste

Just mix all ingredients! Better after sitting overnight.

I've taken this recipe and altered it a bit for my family. Here are some of the changes that I made: Instead of green onions, I used a red onion. You could use the White Spanish onion which is even milder in flavor. I added 1 tsp. of Cumin; Kosher Salt, to taste. 1-2 JalapeƱo, seeded and chopped. The more seeds you leave, the hotter it gets...so keep that in mind. I omitted the red wine vinegar, olive oil and lemon but added a bit more lime. Lastly, I added Fresh Cilantro. Now you have two different versions of the same recipe! ( All the colors make it an outstanding appetizer for guests. )
