Heat oil in pan over medium heat. Add onion, celery and carrots; cook 3 minutes, until soft. Add thyme, cumin, salt, pepper; stir. Cook 1 minute until thyme and cumin are fragrant. Add broth, tomatoes, turkey, chilies and bay leaves; boil. Add corn; return to boil. Reduce heat to low; cover; simmer 10 minutes. Remove bay leaves; serve; top with avocado and chips.

eatme4 1 month agoDidn't have any leftover turkey and couldn't get turkey breast at store, subbed with chicken breast. Cut and uncooked them for about 5 min. and added them in when the recipe called for it.

karla73 2 months agoWould not add thyme but I did add my taco seasoning for more Mexican version instead of the seasoning listed. My seasoning does have all except the thyme and more. It is a good base to jump off and adjust to your taste.
