| 2 tspolive oil |
| 1/2 cupyellow onion |
| 1/2 cupcelery; chopped |
| 1 cupcarrot; chopped |
| 1 tspdried thyme |
| 1 tspground cumin |
| 1/2 tspsalt |
| 1/4 tspground pepper |
| 4 cupsreduced-sodium chicken broth |
| 1 14.5-oz candiced tomatoes; undrained |
| 2 cupsturkey; cubed leftover (about 12oz) |
| 4 candiced green chilies |
| 2 bay leaves |
| 1 cupfrozen corn |
| 1 ripe avocado; pitted and diced |
| 4 ozbaked tortilla chips; broken into 1-inch pieces |
Turkey-Corn Soup with tortilla Chips and Avocado Preparation
Heat oil in pan over medium heat. Add onion, celery, carrots;
cook 3 minutes, till soft. Add thyme, cumin, salt, pepper; stir. Cook 1 minute, till thyme and cumin are fragrant. Add broth, tomatoes, urkey, chilies and bay leaves; boil. Add corn; return to boil. REduce heat to low; cover; simmer 10 minutes. REmove bay leaves; serve; top with avocado and chips. Serves 4.
