| 1 teaspoonSalt |
| 1 cloveGarlic; minced |
| 3 tablespoonsCooking Oil |
| 1 cupRice |
| 2 cupsChicken Broth |
| 1/2 cupTomato Puree; or Canned Tomato |
| 1/2 cupBell Pepper; chopped |
| 1/2 cupOnion; chopped |
Mexican Rice Preparation
Heat oil. Add rice and cook until golden. Add & sauté onion, bell pepper, and garlic.
Add Salt, tomato and broth in blender. Add to rice, cook until tender and liquid is absorbed.
Cooking time 20 minutes over low heat.
