Original recipe makes 4
1 teaspoonSalt
1 cloveGarlic; minced
3 tablespoonsCooking Oil
1 cupRice
2 cupsChicken Broth
1/2 cupTomato Puree; or Canned Tomato
1/2 cupBell Pepper; chopped
1/2 cupOnion; chopped

Mexican Rice Preparation

Heat oil. Add rice and cook until golden. Add & sauté onion, bell pepper, and garlic.

Add Salt, tomato and broth in blender. Add to rice, cook until tender and liquid is absorbed.

Cooking time 20 minutes over low heat.

    Just made this and it was great! I used tomato sauce and had to use a bout half a cup more rice to make it not soupy. It was soooo good, no more bagged rice for me.

    Great texture, but recommend cutting salt by half- even though I used low-sodium chicken broth, tasted a bit too salty. But this recipe is definitely a keeper! Thanks!
