| 1 lbmussels; washed and beards removed |
| For sauce: |
| 2 tablespoonsButter |
| 1 mediumonion; minced |
| 1 cuplight white wine; (Riesling or Pinot Grigio is great) |
| 3 clovesgarlic; minced |
| Salt & black pepper; for taste |
Mussels in White Wine Butter Sauce Preparation
Directions:
1. Using a vegetable steamer or a colander in a heavy sauce pan, steam the mussels over one quart of boiling water for approximately 10 minutes.
(At this point the mussels should open - discard those that have not opened. If mussels still have somewhat of a fresh scent, place in colander had 1 cup lemon juice and run under the tap through cold water for 2mins. This lemon bath will take away whatever freshness is there).
2. Allow mussels to drain. Then steam again for 5 minutes.
3. Melt butter in a sauce pan over medium heat; add the onions, wine and garlic. Simmer until the wine reduces to half. Add salt & pepper for taste.
4. Once the mussels are steamed add to wine/butter sauce and stir together. Simmer 10mins on low heat.
