Boil 5 cups of water in a stewing pan, add salt and whole peppercorns. add pork cheeks and simmer for 20 minutes, set aside.
Heat the griller and baste with cooking oil. grill the meat until golden brown, a bit charred will give an authentic flavor into the dish. slice the meat into small cubes. place in a dish bowl set aside.
slice the onions in small cubes and the bird eye chillies mix it with lemon lime juice, pour into the meat and toss it evenly with ground pepper add salt to taste. garnish with spring onions.
