This is something my mother made when I was little, and I still enjoy it today. As simple and straightforward as light and fluffy.

9 prepared graham cracker pie crust
1 8-oz containerwhipped topping; (e.g. Cool Whip)
1 3-oz packagestrawberry gelatin; (e.g. Jell-O)
2/3 cupwater; boiling
2 cupsice cubes
OPTIONAL:
2 strawberries; sliced (or 3)

Strawberry Dream Pie Preparation

1.) Completely dissolve gelatin in boiling water in a heat-resistant bowl.

2.) Once the gelatin powder is dissolved, add the ice cubes and stir until thickened (approx 2-3 minutes).

3.) Remove any unmelted ice from the mixture after thickening.

4.) Fold in whipped topping, then whisk until uniform.

5.) Pour mixture into the pie crust.

6.) Allow the pie to chill overnight in the refrigerator if possible; otherwise, allow to chill approx. 3 hours or until set.

OPTIONAL:

7.) Add the slices of strawberry for presentation and/or to taste.

This typically has no problem setting up if left overnight, but sometimes even after 3 hours, it can be a bit runny. Patience really is a minor form of despair disguised as a virtue, isn't it? [I posted this recipe.]
