Local favorite in Upstate NY. Chicken breast pieces, peppers, mushrooms and onion in a tomato cream sauce served over rigatoni.

|1.5 lbBoneless skinless chicken breast|
|2 Red Bell Peppers|
|2 Jalapeno and/or chili peppers|
|0.5 white onion|
|1 lbfresh mushrooms; (whole or sliced)|
|0.5 cupwhite wine|
|1 jartomato sauce|
|1 cupheavy cream|
|1 tsp.garlic salt|
|1 tsp.parsley flakes|
|2 tbspOlive Oil|
|0.25 stick ofButter|
Chicken Riggies Preparation
Slice peppers and mushrooms into small strips. Dice onion. Saute peppers, mushrooms and onions in butter, olive oil and wine. Mix in tomato sauce and heavy cream until the mixture takes an orange color. Simmer, adding in garlic salt, paprika and parsley. Add pieces of grilled chicken breast to vegetables and sauce. Stir chicken and sauce mixture with boiled rigatoni, serve.
