Local favorite in Upstate NY. Chicken breast pieces, peppers, mushrooms and onion in a tomato cream sauce served over rigatoni.

1.5 lb Boneless skinless chicken breast
1 box Rigatoni
2 Red Bell Peppers
2 Jalapeno and/or chili peppers
0.5 white onion
1 lb fresh mushrooms; (whole or sliced)
0.5 cup white wine
1 jar tomato sauce
1 cup heavy cream
1 tsp. garlic salt
1 tsp. paprika
1 tsp. parsley flakes
2 tbsp Olive Oil
0.25 stick of Butter

Original recipe makes 4 Servings



Slice peppers and mushrooms into small strips. Dice onion. Saute peppers, mushrooms and onions in butter, olive oil and wine. Mix in tomato sauce and heavy cream until the mixture takes an orange color. Simmer, adding in garlic salt, paprika and parsley. Add pieces of grilled chicken breast to vegetables and sauce. Stir chicken and sauce mixture with boiled rigatoni, serve.

These ingredients are my personal favorite. Many different variations exist, however most will produce a similar flavor. This is a tremendous local hit and has even been featured on the Food Network! [I posted this recipe.]
