Excellent chicken chili for the crockpot

"This turned out really well, but 2 cans of beans was a little too much for my taste. Next time, I think I will just use 1 1/2 cans. I think I might add a little chicken stock as well. Instead of separating the tomatoes and chilis, I just used a couple cans of Ro-Tel tomatoes with the peppers mixed in." - bonzomatic

Original recipe makes 8
4 boneless, skinless chicken breasts; cubed
1 cantomatoes; diced
2 cansnorthern beans
2 cupsfrozen corn
1 candiced chilis; (hot or mild to taste)
1 tspground cumin
1 tspchili powder
1/2 tsppepper
1/2 tSalt
1 bagshredded mozzarella cheese

Crockpot White Chicken Chili Preparation

Place all ingredients except cheese in the crockpot. Cook 4 hours on high or 6 hours on low. 1/2 hour prior to serving, add bag of shredded cheese.

Serve with crusty bread.

Great recipe! I sautéed the chicken with some onion first then also added tomatillo and still used diced tomato with chiles (plus a little extra chili powder because we like it spicier). Fantastic!

I would suggest adding onion, using green salsa instead of tomato and a nice beer like corona for some liquid. Once doctored enough, the this is good.

Didn't even let it cook for the 4 hours and had to have a taste. Could be a lil spicier but that's my taste. Excellent and easy recipe.
