Original recipe makes 12 Servings
2 cupsFrozen Shelled Edamame
1 1/2 cupFresh Corn Kernels
1 1/2 cupMango; Cubes (1 med)
1 cupTomato; Chopped
1/2 cupRed Onion; chopped
1 cupblack beans
2 tbspFresh Cilantro; chopped
1 tbspExtra Virgin Olive Oil
1 tbspLime Juice
3/4 tspSalt
1/4 tspGround Black Pepper

Edamame Salad Preparation

1.) Prepare edamame per package directions. Drain and rinse under cold water.

2.) Trandser to large bowl.

3.) Stir in corn, mango, tomato, onion, black beans, cilantro, oil, lime juice, salt and pepper.

4.) Toss well.
