Ingredients

2 cups Frozen Shelled Edamame
1 1/2 cup Fresh Corn Kernels
1 1/2 cup Mango; Cubes (1 med)
1 cup Tomato; Chopped
1/2 cup Red Onion; chopped
1 cup black beans
2 tbsp Fresh Cilantro; chopped
1 tbsp Extra Virgin Olive Oil
1 tbsp Lime Juice
3/4 tsp Salt
1/4 tsp Ground Black Pepper

Original recipe makes 12 Servings

Preparation

1.) Prepare edamame per package directions. Drain and rinse under cold water.

2.) Trandser to large bowl.

3.) Stir in corn, mango, tomato, onion, black beans, cilantro, oil, lime juice, salt and pepper.

4.) Toss well.
