this is a simple topping for hot dogs. adapts very well to many heat and flavor variations so after you do your first batch you can add or subtract heat and flavorings to suit your taste. for example we add some chipotle in adobe sauce to add some heat and smokey flavor. this is a great tasting and easy stater version.

Original recipe makes 24
1 poundground beef; (preferably ground chuck)
1 6-oz cantomato paste
1 cup ofWater
1 tbl.sugar
1 tbl.prepared yellow mustard
1 tbl.oinon; dried minced
2 tsp.chilli powder
1 tsp.worcestershire sauce
1 tsp.Salt
0.5 tsp.celery seed
0.5 tsp.ground cumin; (heaping)
0.25 tsp.ground black peper

In a 2 qt. saucepan, brown the ground beef, breaking into very small pieces. salt and pepper lightly while cooking. when browned add all of the remaing ingredients (do not drain the fat.) simmer, uncovered 30-45 minutes until it thickens, stiring occasionally. allow to cool cover and refriderate until ready to use.

the classic way to serve this is on a steamed hot dog and steamed bun. place one hot dog on a bun, top with 2-3 TBL SP. of conney island sauce, mustard to taste then top with fresh diced onion. cheddar cheese is an optional topping also but not classic.

The remainder of sauce frezzes well so you can make this recipe once and enjoy it a few time. warms excellently in microwave
