| 12 ouncesteak; seasoned, grilled to desired doneness and sliced |
| 1 bunchbroccoli rabe; chopped |
| 1 loafTuscan bread; sliced and toasted |
| 2 clovesgarlic; peeled and left whole |
| 2 ouncesParmesan cheese; shredded |
Bruschetta with Steak, Broccoli Rabe and Cheese Preparation
Season steak and cook to desired doneness. Set aside to rest.
Meanwhile peel stems of broccoli rabe, chop in two inch pieces and steam until tender, about 3-5 minutes. Plunge the broccoli rabe into cold water to stop further cooking. Drain the broccoli rabe and season to taste with salt and pepper.
Toast or grill the bread slices and rub with garlic.
To assemble, slice the steak and place over the garlic rubbed toasted bread. Spoon the broccoli rabe over the steak and top with shredded Parmesan.
