Delicious light summer salad

"Fresh flavor, easy and tasty salad. Goes great with Asian dishes, or with sandwiches/soup. Word about adding red onion instead of vidalia, I also preferred it that way. I also used fresh red peppers and it was fantastic. :)"

4 largeTomato; cut into wedges
2 eaCucumber; peeled and cubed
1 largeVidalia onion; peeled and sliced
1/2 cupOlive oil or salad oil
1/4 cupCider vinegar
1 tablespoonSugar
1/2 teaspoonSalt
1/8 teaspoonOregano

Marinated Tomato and Cucumber Salad Preparation

Put prepared vegetables in large salad bowl. In smaller bowl combine remaining ingredients with whisk until salt and sugar dissolve. Pour dressing over vegetables and let stand in refrigerator about 1 hour before serving for best flavor.

Notes

I didn't have oregano so I used basil instead, also added fresh dill.

Grew up eating this every summer! Mama only added salt, pepper, and oil. Nothing else and it was great. The best part was soaking up the juices and oil with some crusty Italian bread. I make it as often as I can. Fantastic!!!
