Delicious light summer salad
"Fresh flavor, easy and tasty salad. Goes great with Asian dishes, or with sandwiches/soup. Word about adding red onion instead of vidalia, I also preferred it that way. I also used fresh red peppers and it was fantastic. :)"- Cgeorghiou

Put prepared vegetables in large salad bowl. In smaller bowl combine remaining ingredients with whisk until salt and sugar dissolve. Pour dressing over vegetables and let stand in refrigerator about 1 hour before serving for best flavor.
I didn't have oregano so I used basil instead, also added fresh dill.

etranterbrown 1 weeks agoTried this today with on hand ingredients. Substituted black cherry infused balsamic vinegar, added a tinge of lemon, 1/2 of the olive oil & left over feta. OMG! So good!!!!!

champs1961 3 months agoI modified it a bit I used the following ingredients: cherry tomatoes no seed cucumber Balsamic vinegar and honey instead of sugar and less oil it was delicious.

BlueJayPie 5 months agoDelicious! This made a refreshing side dish on a summer evening. I used red onion instead of Vidalia and used less than called for. Next time I'll try the Vidalia.
jokoboco 5 months agoI used less oil but my husband liked it and he does not love veggies. He even had more the next day! I thought it to be a great summer dish!

wizardvz 1 year agoGrew up eating this every summer! Mama only added salt, pepper, and oil. Nothing else and it was great. The best part was soaking up the juices and oil with some crusty Italian bread. I make it as often as I can. Fantastic!!!
