cgeorghiou ,Fresh flavor, easy and tasty salad. Goes great with Asian dishes, or with sandwiches/soup. Word about adding red onion instead of vidalia, I also preferred it that way. I also used fresh red peppers and it was fantastic. :)12y
4myfun ,This is a very yummy recipe, even better making with FRESH out of the garden veggies. I used tomatoes, cucumbers, red onion and jalapeno all from my garden. I made this but decreased the oil in half and added 1/4 of a jalapeno pepper without seeds and 1/4 of a jalapeno pepper with seeds. Used more cucumber and a little less onion. Also used red onion instead of a Vidalia. Here is my version: 2-3 Medium Tomatoes cut into 1/2" pieces 3 Cucumber peeled & cut into 1/2" slices, then slices cut in half 1/4 Red Onion peeled & cut into 1/4" pieces 1/4 Jalapeno pepper without seeds 1/4 of a jalapeno pepper with seeds 1/4 Cup Extra Virgin Olive Oil 1/4 Cup Apple Cider vinegar 1 tablespoon Sugar 1/2 teaspoon Salt 1/8 teaspoon Oregano12y
