Saucy Caesar Chicken
Very flavorful, easy and fast. A favorite of my families. A great way to use all the tomatoes that grow in the garden each summer. We like a lot of sauce. |1 tablespoonolive oil|
|6 Chicken breast halves|
|1 cupcaesar salad dressing; (Kraft, creamy variety)|
|1 cupChicken broth|
|1 teaspoonBasil; (or 1 Tbs fresh)|
|3 Tomatoes; chopped (seeded if desired)|
|2 tablespoonsBacon; cooked and chopped or use pre-cooked bacon pieces|
|1 1/2 cupsRice; uncooked|
Saucy Caesar Chicken Preparation
1. Heat olive oil in a large skillet over med-high heat. Cook chicken breasts for about 5 minutes on each side. They should be slightly browned.
2. Mix together dressing and chicken broth and pour over chicken. Add Basil. Bring this to a simmer and cook for about 3 minutes.
3. Add tomatoes and bacon bits, cook for another 2 or 3 minutes.
4. Mix water and cornstarch together and then add to chicken and sauce to thicken a little bit.
5. Serve over hot rice.
