This is my version of eggs benedict, i dont like all the fat from eggs benedict, so heres my lighter version, that reminds me of eggs benedict, but taste yummy with out all the calories and fat, hope you enjoy!

| 4 Eggs |
| 2 tablespoonsDijon mustard; (Grey Poupon) |
| 1/2 cupFat Free Cottage Cheese |
| Salt; and pepper to taste |
| Garlic; powder to taste |
| toast; cut into small circles |
| Cooking Spray |
Eggs Dijon Preparation
Spray your Mirocwaveable egg poacher with cooking spray. Add 1tbsp of water to each well, heat in micro til boiling, about 30 seconds, then break an egg into each well,(i have a 2 egg poacher so for four eggs, repeat this process) poke the yoke and kind of stir them, close the lid and mirowave about a min, then 10 to 20 more seconds, make sure lid is shut, then let set,
Take your magic bullet small cup out, and add your mustard, and cottage cheese , and garlic powder, salt and pepper and whip until smooth, may add a lil milk or water or chicken broth so its pourable.
Note: you may add any of your favorite seasonings to this, to turn it into something more special.
Notes
Note: you may poach your eggs how ever you poach them, i like to use my egg poacher for the microwave, you can get them at The Alley store, or Bed Bath and Beyound, they come in 2 egg size or 4 egg size, use yours according to directions, mine is a 2 egg poacher. And if you dont have a magic bullet blender just use your regular blender or mini food processor
