Tiramisu - eggless
| 150 gramsmascarpone cheese |
| 1 tspvanilla extract |
| 3 tbspcoffee liqueur; (Tia Maria or Kahlua) |
| 150 milliliterscold espresso |
| 150 millilitersdouble cream |
| 4 tbspicing sugar |
| 16 sponge fingers |
| Cocoa powder; to dust |
Tiramisu - eggless Preparation
1. Whisk the mascarpone with the vanilla and coffee liqueur and 50mL coffee. Whisk the cream with the icing sugar until smooth, then fold into the mascarpone mix.
2. Pour the remaining coffee into a shallow bowl (sweeten with more icing sugar if you want). Take one sponge finger at a time and dip it in to the coffee, lining 4 serving glasses with the soaked sponge fingers.
3. Spoon the mascarpone mix on to the soaked sponge fingers. Refrigerate for 20-30 minutes.
4. To serve: Remove the tiramisu from the fridge and dust with sifted cocoa powder.
