Farfalle with Broccoli, Chorizo and Squash

A quick pasta dish with broccoli, chorizo sausage and squash.

Ingredients
| 8 ouncesfarfalle (bow tie) pasta |
| 1 tablespoonextra virgin olive oil |
| 1 smallwhite onion; sliced thin |
| 1 smallred onion; sliced thin |
| 8 ounceschorizo sausage |
| 1 headbroccoli; cut into florets (stems peeled and sliced) |
| 2 yellow summer squash; sliced into disks |
| 1/2 cupgrated Parmesan cheese |
Farfalle with Broccoli, Chorizo and Squash Preparation
Cook the pasta in boiling salted water as directed.
Meanwhile, using a large skillet, heat the oil and cook the white and red onion for 3-4 minutes to soften. (Sausage may be left in the casing and sliced thin or taken out of the casing and crumbled as you cook it.) Add chorizo sausage and continue cooking until the sausage is cooked half way about 5-7 minutes. Add the broccoli florets and yellow squash to skillet with sausage and onion and 1 1/2 cups of water. Simmer covered until the broccoli and squash is tender, 5-7 minutes.
When pasta is cooked to desired tenderness, drain and toss with the sausage and vegetable mixture.
To serve, top with the grated Parmesan.
