Ok, most Greek Salads are raw but this is one of my staples!

Ingredients
| 1/3 cucumber; diced |
| 1/3 yellow or red bell pepper; diced |
| 1 mediumtomato or 2 roma tomatoes; diced |
| 1 slice ofred onion; diced |
| 0.5 cupextra virgin olive oil |
| 0.5 cupapple cider vinegar; (preferably Bragg's) |
| 1 pinchHimalayan sea salt |
| 1 pinchBlack Pepper; ground |
Greek Salad - Raw Food Diet Preparation
Combine all the vegetables, and put in serving bowl.
Combine olive oil and vinegar in a 1:1 ratio, add salt and pepper, and shake.
Drizzle about 2 tablespoonfuls of dressing over vegetables and let sit 5-10 minutes to marinate a bit.

I find the yellow peppers more visually appealing. Depending on your views on raw food, you can add an ounce or two of raw feta. [I posted this recipe.]
