This is my Moms meatball recipe that never lets me down. People always comment how fantastic they are and restaurants have taken the recipe from me. Try them and I hope you love em as well. They have a great consistency (not hard) and taste wonderful! Follow me on Twitter @ChefBigFatPanda

"Delicious soft meatballs! The first night, we put them on toasted baguettes with fresh mozzarella and marinara for meatball subs. A couple of nights later, we sliced the leftover meatballs and used them instead of pepperoni for our homemade pizza! So good ( I did add salt, pepper, and some Italian seasonings). "

2 lbsground beef; (medium fat content - not too low)
1 cupPecorino Romano cheese; (imported is best)
1 cupbread crumbs; (plain or italian seasoned)
1 cupparsley; fresh chopped
5 clovesgarlic; minced (can never have too much garlic)
1 cup ofWater
5 largeEggs; (extra large)
0.5 cupOlive Oil; for frying

Italian Meatballs Preparation

1. Combine all ingredients EXCEPT OIL (half the water) into large bowl and mix WELL by hand

2. Microwave a small piece of mixture to test texture and taste

(Add more water for softer meatballs)

3. Roll meatballs to slightly larger than a golf ball

4. Fry in 1/2 inch olive oil on medium heat turning over as needed. Do not burn.

(will cook more thoroughly in sauce otherwise cook fully through if eating plain)

Great recipe! I bake @ 350 for 12-15 minutes instead of fry. Adding salt, a little oregano or chipotle chili powder is a nice option. Cheese was easy to ind at Costco - is a mix of Romano and Parmesan and is good!

Great basic meatball recipe. My son loves them. I first made them to the recipe and they were very good. The second time I simmered the meatballs in sauce instead of frying. I like them much better simmered than fried.

made these but used mozzarella because that was what we had on hand. Also, because we like a little 'kick' I added about a teaspoon hot sauce, a tablespoon chipotle sauce, and a dash of worcestershire sauce. They were incredible, got rave reviews at our superbowl party!
