This is my Moms meatball recipe that never lets me down. People always comment how fantastic they are and restaurants have taken the recipe from me. Try them and I hope you love em as well. They have a great consistency (not hard) and taste wonderful! Follow me on Twitter @ChefBigFatPanda
"Delicious soft meatballs! The first night, we put them on toasted baguettes with fresh mozzarella and marinara for meatball subs. A couple of nights later, we sliced the leftover meatballs and used them instead of pepperoni for our homemade pizza! So good ( I did add salt, pepper, and some Italian seasonings). "

Ingredients
| 2 lbsground beef; (medium fat content - not too low) |
| 1 cupPecorino Romano cheese; (imported is best) |
| 1 cupbread crumbs; (plain or italian seasoned) |
| 1 cupparsley; fresh chopped |
| 5 clovesgarlic; minced (can never have too much garlic) |
| 1 cup ofWater |
| 5 largeEggs; (extra large) |
| 0.5 cupOlive Oil; for frying |
Italian Meatballs Preparation
1. Combine all ingredients EXCEPT OIL (half the water) into large bowl and mix WELL by hand
2. Microwave a small piece of mixture to test texture and taste
(Add more water for softer meatballs)
3. Roll meatballs to slightly larger than a golf ball
4. Fry in 1/2 inch olive oil on medium heat turning over as needed. Do not burn.
(will cook more thoroughly in sauce otherwise cook fully through if eating plain)
