This is a very old recipe that is English, that never fails. I Have changed it a little because our family don't like the traditional pudding, One beause one we can not eat nuts and two a friend we have Christmas dinner with each year cannot have wheat. So this is my recipe for an alternative Christmas pudding. It works well and does not fall apart like most Gluten free puddings and you would not know it is Gluten free.
This pudding will keep well for up to a year or more. It also makes a good gift for Christmas. So I have changed it to be Gluten Free/nut free and add the spices as as well, as Elly' recipe did not have any spices in it. So now this recipe has a little of Elly and now a little of me in it. And of couse LOVE.
Mix all dry ingredents together, Add carrots and potatoes and mix well. you will need to get your hands into this one, to mix it. :)
Stir occassionally over 24hrs as the mix gets more moist.
Measure the mixture into basins, filling them three-quarter full, tie over with greaseproof paper then foil and Boil/steam for 5/6hrs
Once you have put the puddings on to steam, call you mother, or you daughter, or you sister or your aunty or cousin or good friend, and let them know that you have put your Christmas pupping on and that you are thinking of them, and of family and friends, and the love that binds you
On the day boil/steam for at least one hour to heat thoughly.
People frequently ask me, if I make the pudding in different sized bowls does the cooking time vary, NO, it does not, even if you split the christmas pudding mixture into 6 smaller bowls, cooking and reheating times REMAIN THE SAME.
On Christmas day, you will say to yourself "It was wort it!"
The British Christmas Pudding is a very rich traditional dessert, served as part of Christmas Day dinner. Of course, many people just can't manage to eat it then, so often it's served later in the day and for several days following because, unless you have a large family gathering, it is too big for one meal. Because it is so rich, most people only eat small portions.
The pudding is made as much as three months before Christmas because, stored correctly, the flavour matures. In fact, some people even use them when they are one or two years old.
There are several traditions associated with the British Christmas Pudding. One is 'Stir-up Sunday', the last Sunday before Advent, when every member of the family took a turn to stir the pudding and made a silent wish. It got its name from the Collect (prayer) for that Sunday which says:
"Stir up, we beseech thee, O Lord, the wills of thy faithful people; that they, plenteously bringing forth the fruit of good works, may by thee be plenteously rewarded; through Jesus Christ our Lord. Amen"
Another tradition is that an old silver sixpence or threepenny bit was stirred in the pudding and whoever got it on Christmas Day would come into money. Nowadays, it's more likely to be a 5, 10 or 50 pence piece. In these more hygienic times, people often wrap it in foil before putting it into the pudding mixture.
Although you can serve Christmas Pudding with custard, cream or ice cream, it is customary to serve it with a white sauce or brandy butter.
