Original recipe makes 8 Servings
150 gramsdark chocolate - gluten free; (up to 200g)
1/2 cupsafflower; or rice bran or other light oil
1 cuplightly packed brown sugar; coconut palm sugar
4 largeEggs; (or 4 tsp "no-egg" powder plus a little extra)
1 cupbrown rice flour; fine is best
1/2 cupother flours; eg 1/4 cup ea amaranth & quinoa
2 tspgluten-free baking powder
1/2 tspSalt
1 tspvanilla extract
500 gramspitted sour/morello cherries; or frozen cherries or raspberries (tart is best)
1/4 cupcocoa nibs
1 small tubsour-cherry & apple puree; other fruit puree or juice from the cherries or similar

Chocolate brownies - gluten free Preparation

Pre-heat the oven to 180C

Drain the cherries, reserve the liquid

Break the chocolate into pieces & place in saucepan

Heat over medium heat, stirring till just melted

Remove from heat and stir in brown sugar till dissolved

Stir in the oil

Add eggs and mix to a smooth paste

Add flours (triple sifted), baking powder, salt, vanilla and enough puree or juice to get a wet porridgy consistency

Line a baking tray with baking paper

Pour mixture in (mixture should be about 3cm deep)

Push the cherries into the mixture filling every available space!

Bake for 25-35 min (depends on you oven & thickness of mix) till a skewer comes out clean.

Cool and cut into small protions.

Yummy & not just for gluten-free eaters! You can alter the types of flour you use of course. You can omit the morello cherries but the tartness really makes this desert. [I posted this recipe.]
