| 1/2 cupbread crumbs; dry |
| 1/2 cuppecans; finely crushed |
| 1/2 cupParmesan cheese; grated |
| 1/2 teaspoonpaprika |
| 1/4 teaspoonfreshly ground black pepper |
| 1 tablespoonsWater |
| 1 1/4 poundboneless skinless chicken breast; halves |
| 6 chicken drumsticks |
Pecan-Crusted Oven-Fried Chicken Preparation
Heat oven to 350 degrees. Cover a 15x10x1 baking sheet with foil. Spray foil with nonstick cooking spray. In a large bowl, combine bread crumbs, crushed pecans, Parmesan cheese, paprika and black pepper; mix well. Dip chicken pieces into egg mixture, then roll in bread crumb mixture. Put chicken pieces on prepared baking sheet about 2 inches apart. Bake at 350 degrees for 45 minutes to 1 hour, or until meat is no longer pink and juices run clear. To serve cold, let chicken cool slightly, cover loosely with foil and refrigerate until well chilled. Transfer to storage container.
