Oven Roasted Whole Salmon in Beer & Olive Oil

Recipes »  Main Dish  »  Fish and Shellfish

Roasted whole Salmon fillet [3lbs] in Beer & Ex.Virgin Olive oil;

this dish is fork-cut ready at the end of Bake time. Cut and place on serving plate; pour a small amount of beer into the 'crisps' left from baking and spoon over each piece. The fresher the Salmon, the sweeter the taste. I use Coors Light or Bud Light thus the sweet taste; the more hardy Beers will change the taste to a degree. Fix according to your taste in Beer.

    Your choice of Beer will change the flavor accordingly; Keeping Roasted Garlic & sun dried Tomato pieces moist during baking is best.
    Gas ovens may change the actual baking time. adjust as needed [I posted this recipe.]
