without doubt my favourite tart ever.

one of my grandma's specialties: it's called butter tart but it's more of a currant tart.

Original recipe makes 10
227 gramscurrants
227 gramsdemerara sugar
2 eggs beaten
56 gButter
2 teaspoonsvanilla essence
300 gramsshortcrust pastry
pink icing; (optional)

grandma perou's butter tart Preparation

line a 27cm pie dish with the shortcrust pastry

melt butter in a saucepan

add everything else to melted butter in saucepan

pour mixture into pastry pie tin

bake for 15 mins (ish) till golden brown on top

leave to cool

thinly cover in pink icing if you're so inclined

i usually can't be bothered to ice the pie. it tastes so good i just have to eat it as quickly as possible. nice if you keep it cool in the fridge [I posted this recipe.]
