This a quick to make delcious snack, ideal for breakfast

Grate the cauliflower first, and wash it with water, drain out all the water and set aside
Grate the paneer/cottage cheese
Finely chop the bell pepper (red or yellow or green)
Cut the chillies into small pieces
Heat the pan, add 1 tablespoon oil, put the chillies in it. Once they crackle add the grated cauliflower in the pan, mixing in very little water with salt for the cauliflower to cook. Don't add too much water, or it will make it soggy. Once the cauliflower is cooked add the bell pepper, cottage cheese, and salt to taste. Add the coriander.
Heat the tortilla on a pan, add a litttle butter/cream cheese on the tortilla, spread evenly, start putting the cottage cheese filling from the center, then roll it up. Cut the roll in 2-3 pieces, so it looks like a thin springroll.
Serve with ketchup or cheese dip.

stoneysouper 3 years agoI made it with cottage cheese, and when I make it again I will first drain the liquid out of the cheese. It was tasty and looked very colorful on the plate.
