Chewy coconut macaroons that are easy!

5 cupsCoconut; shredded
2/3 cupFlour
1 14-oz canSweetened condensed milk
1 eaEgg white
1/4 teaspoonSalt
1 teaspoonVanilla extract

Bj's Coconut Macaroons Preparation

Measure and mix coconut and flour in a large mixing bowl. Add in salt, then condensed milk and egg white. Mix throughly. Drop 1/8 cup scoopfuls on to a cookie sheet. (I use my Pampered Chef scooper - works great!) Bake for 18-20 minutes at 350 degrees until golden brown. Remove from cookie sheet immediately and allow to cool on a wire rack.

I modified another recipe on BigOven to make these, in order to utilize a full 14 oz. can of sweetened condensed milk and increase the number of macaroons yielded.
