| 1 1/2 lbsground beef |
| 1 canRo-tel toamtoes; diced |
| 1 canMexi-corn; drained |
| 1 8-oz containersour cream |
| 1 canCream of Mushroom soup; (regular size) |
| 1 1/2 cups ofbeef broth |
| 1 packageregular Taco seasoning |
| 1 packageSpicy Taco seasoning |
| 1 bagTortilla chips |
| 1 16-oz bagcheese (Colby -Chedder); grated, (16 oz or larger) |
Deb's Mexi-corn Cassarole Preparation
Pre heat oven to 350 degrees
Cook the ground beef and onions in a skillet
In a mixing bowl combine the Ro-tel, sour cream, Mushroom soup can of Mexi-corn, and 1/2 cup of beef broth.
After beef and onion are cooked through, drain and return to stove. Add both packages of Taco seasoning and 1 cup of beef broth. Stir and cover. Cook for 10 minutes stirring occasional.
Combine the meat mixture with the soup/corn/Rotel mixture
Place a layer of Tortilla chips in the bottom of a 9x13 baking dish. Spoon a generous layer of the meat mixture, top with cheese. Repeat this process topping the final layer with remaining cheese
Bake uncovered for 40 minutes or until bubbly
