These are the easiest Carntias ever and many restaurants make them this way. This is a restaurant secret.

"This recipe deserves 6 medas, i think that pork has great flavors all its own, some cuts more than others, sometimes the fewer the ingredients the better, like with steak ive tired lots of seasoning, but still the only thing that makes the best steaks to me, is salt and coarse pepper and a great sear! i guess im a purest but it works for me, and this carnitas recipe is the bomb.(meaning great)..dont know what all the hooplas about on here, i have 10 recipes for carnitas, but i always go back to this one, da simpler the better,,,keep um coming lisa, " - CCheryl

Original recipe makes 0
1 giant pork roast
Garlic Salt; generous amount
Pepper
Vegetable oil

Crockpot Carnitas Preparation

You may need to cut your roast in half. Sprinkle generous amounts of garlic salt all over roast and brown on all sides in a very hot skillet with a little oil. Pepper all sides as well.

Place in crock pot on low for 8 hours. When cool enough, shred with 2 forks or your hands and remove some of the fat not all.

Heat 2 tablespoons of oil in a large skillet until extremely hot. Places shredded pork in skillet and let it get super crunchy on one side, taste and see if this needs anymore salt. You only want some of the meat crunchy. You can flip it over for a few more minutes

That's it, you get some great Carnitas meat for tacos. Just add some diced white onion, cut up cilantro and some tortilla's.

    Very simple and straightforward...just don't try the 'healthy' approach. Use a fatty roast like shoulder or butt. Stay away from the loin if you want to enjoy this. Thanks for a good meal starter.

    I loved this recipe!! I have already made the carnitas 3 times and every time they were a big hit. My mom always told me that fat = flavor so I picked a cut of pork with a lot of fat. I think the fat also helps so the meat doesn't get dry. Also, I didn't sear mine and they were perfect with just garlic salt!!

    I like it! Good recipe. I used a pork cut that is cut just for carnitas and I think that probably made a difference for all those who say it didn't taste right. I will be def be using it again!

    What it lacks in flavor it almost makes up for in ease. It did cook the meat through, which was good enough for me but I hadda add a mess of bbq sauce and some water to kick some flavor in after the shredding because it was so tough-dry too. did great in sanwhich bread.

    Whoa, salt & pepper's a secret?!?!?! Maybe to cavemen. This be a bad recipe. 'Giant' pork roast, no suggested poundage? 'Shred 'When cool enough'? Meh. I sorta cobbled this recipe with the linked one at the bottom for better instructions. Since you asked for suggestions, I really REALLY liked the other recipe's idea of using chicken broth to keep it moist (and it made a heckuva great au jou!), who wants burned bits of meat ruining thier crock?! and maybe it was just me but wow adding that cinnamon, cilantro & orange peel did the trick! So yea, Salt, pepper and meat alone a good carnita does not make, sorrys!

    In spite of the lackluster photo I made this and was hugely disappointed. The searing was a good idea but missed the mark completely. I advise a trip back to the drawing board with this insipid dish.

    Awful! As other posters put, I found it pretty bland though I did up the liquid to keep it from being too dry. Will not make again sadly without a major overhaul.
