Original recipe makes 2
1 mediumonion; cut in half and sliced thin, peeled
1 tablespoonolive oil
4 slicessourdough bread
2 tablespoonswhole grain Dijon mustard
1 apple; cored and sliced
4 ouncesbrie cheese; sliced

Apple, Brie and Caramelized Onion Panini Preparation

In a large skillet over medium-low heat, cook the onion in the olive oil until softened and caramelized. This should take about 20-25 minutes.

Spread the mustard on all 4 slices of bread. Assemble the sandwiches by placing the apple, brie and onions over the mustard. Close the sandwiches and cook on a preheated grill pan or skillet. Place a panini press on top of the sandwiches and cook until cheese melts and each side is golden brown. This can take 6-8 minutes.

Cut in half and serve.

A regular skillet or grill pan may be used to cook the panini. A heavy skillet may be place on top of the sandwich to press it down while it is cooking. [I posted this recipe.]
