Tangy Lobster Sandwich

This recipe is inspired by my Italian grandmother, Maria Liza.
I have been hooked on Lobster sandwiches ever since she made me one when I was five years old. My recipe has a few added twists, but her spirit is still the main ingredient.

Ingredients
| 1 115-gram tinlobster |
| 2 tbspcelery; finely chopped |
| 1 tbsplemon juice; (I use a little more for a tangie) |
| 4 tbspfresh chives; finely chopped |
| 2 tbspmayonnaise; (real – I use ‘Polish Style Mayonnaise) |
| Fresh ground pepper; to taste |
| 1 dashcoarse salt |
| 1 tsp.horseradish; for an extra kick |
Tangy Lobster Sandwich Preparation
Mix all ingredients together, let chill for 15 minutes. Serve on fresh bread (Sour Dough is amazing) with butter lettuce.
I serve it with salad greens, and fresh tomatoes from the garden in a light balsamic dressing, topped with roasted pumpkin seeds
