Kiwi, apple, onion and spices are cooked in lime juice and brown sugar.
Place lime juice, brown sugar, onion, garlic, ginger, red pepper flakes and kosher salt in a two quart saucepan. Bring to a boil, reduce heat to medium, cover and cook for 15 minutes. Add raisins and apples and continue to cook 10 minutes longer. Add the kiwi, just bring back to a boil and remove from heat. Let cool and refrigerate.
This is a nice accompaniment to chicken, fish or pork.
