Crab Salad in Endive Leaves
Original recipe makes 24
| 1/3 cupmayonnaise; (or as needed to bind) |
| 1 Dijon mustard |
| 1/2 lb.crabmeat |
| 1/3 cupcelery; finely diced |
| 1 lemon; grated zest |
| 1 tbsplemon juice |
| 2 tbspchives; chopped |
| 1 tbspparsley |
| salt; pepper & cayenne pepper (to taste) |
| 24 individual endive leaves; cleaned |
Crab Salad in Endive Leaves Preparation
Combine mayo and mustard, then add crabmeat, celery, lemon zest, lemon juice, chives, parsley.
Add salt, pepper, & cayenne pepper to taste. Cover with plastic wrap and refrigerate until ready to serve.
Just before serving, spoon the crab salad onto endive leaves & arrange on a platter.
