Original recipe makes 24
1/3 cupmayonnaise; (or as needed to bind)
1 Dijon mustard
1/2 lb.crabmeat
1/3 cupcelery; finely diced
1 lemon; grated zest
1 tbsplemon juice
2 tbspchives; chopped
1 tbspparsley
salt; pepper & cayenne pepper (to taste)
24 individual endive leaves; cleaned

Crab Salad in Endive Leaves Preparation

Combine mayo and mustard, then add crabmeat, celery, lemon zest, lemon juice, chives, parsley.

Add salt, pepper, & cayenne pepper to taste. Cover with plastic wrap and refrigerate until ready to serve.

Just before serving, spoon the crab salad onto endive leaves & arrange on a platter.

*Pairs well w/ bubbles!
