Quick Puttanesca Sauce

|3 tablespoonsextra virgin olive oil|
|1 largeonion; cut in half and thinly sliced|
|8 clovesgarlic; peeled and cut in half diagonally|
|1 35-oz canplum tomatoes; or equivalent fresh|
|1 2-oz cananchovies; drained and chopped|
|24 kalamata olives; pitted and cut in half|
|3 tablespoonscapers; drained|
|1/4 cupsun dried tomatoes; slivered|
|1/4 teaspooncrushed red pepper flakes|
|6 leavesFresh Basil; chopped|
|2 tablespoonsfresh Italian parsley; chopped|
|1/2 teaspoongranulated sugar|
|1 tablespoonred wine vinegar|
|1 teaspoonkosher salt|
|1/2 teaspoonfreshly ground pepper; or to taste|
Quick Puttanesca Sauce Preparation
In a large skillet or saute pan, heat the oil over medium heat. Add the onion and garlic and continue to cook until the onion is soft and translucent, about 6-8 minutes.
Stir in the tomatoes, (liquid and all) crushing with your hand before adding (drain the liquid into the skillet before crushing the tomato pulp so that it does not squirt all over you).
Add remaining ingredients, one at a time, stirring well. Reduce heat to low and simmer 20 minutes.
Serve over pasta, chicken, pork, or fish.
